Image below shows Traditional Steep Temperature, Time, and Quantity for brewing tea. Use this for tea, kombucha, and tinctures.
Going past the time mark will extract more tannins and will lead to a more bitter tea. Some people enjoy this. For a rounder, more floral flavor, do a room temperature steep for about 4-8 hours then strain before drinking. This type of infusion is referred to as Grandpa Style tea. Do NOT do over 18 hours of room temp infusion because mold spores will start to colonize. If you desire an extra long cold steep, do so in the refrigerator.
